These are some of the lovely apples picked by my neighbor and her girls last Sunday…during our first snow! (Thankfully the snow didn't stick, but dang that was early.) They were nice enough to share the harvest with me, so I pulled out my favorite cookbook and made mini-apple pies.
They're about 6" across and a couple inches deep. The photo above shows the pies ready to bake, with some scrambled egg brushed across the tops so they'll brown up nicely.
Here they are right out of the oven…
The only modification I made to the recipe was to add a couple teaspoons of corn starch to the filling to help it "set up". I didn't want a potentially runny filling making the bottom crust all soggy.
They turned out just right and not too-sweet. The apples were SO good! Thanks Angela. 🙂
