Apple Butter Pies

Mmmmm!  Did a little baking this weekend.  :)  This is a Martha Stewart recipe that I found a few years ago.  That woman knows pies.
These always seem more like a fall treat, but I've had this Apple Butter in my cupboard just begging to be used.  It was tempting me every time I opened the door & other than make pies, I'm not actually sure what to do with it.  Could you put it on an English muffin or something?
I omit the lemon zest in the crust…it's a texture thing for me.  Maybe I'm not "zesting" the peel small enough?  And mostly by accident I end up using more cinnamon sugar over the top than is called for in the recipe. But they always turn out super yummy.
