Cooking isn't something that often occurs to me. Baking, yes. But cooking – it's a rare day that I enjoy it. Today is that rare day! Thanks to last year's Costco cook book and the recipe for Chicken Breasts Stuffed with Dried Fruit & Goat Cheese. Yum! Above is the stuffing mixture, which includes apricots, dates, thyme, sautéed onions & the aforementioned goat cheese. Below we have the chicken stuffed and ready to cook:
